Is there any official estimations/investigation regarding the number of citizens from "cono sur" countries (Argentina, Brasil, Chile, Uruguay) living in NZ?

If possible sorted by country and legal status (permanent residence, working holidays, etc)

Though they may request it, it is not lawful for the Ministry of Foreign Affairs and Trade to require that you provide them with a separate email address before they respond to your Official Information Act request.

Though I can only hope that you have since discussed it with them in private and received the information you had requested, you would be quite within your rights to require that all communication with the Ministry regarding this request occur via the FYI website.
